cranberry cashew coconut bark.

You know, I think that the old “good things come in threes” saying might have some merit.

three C’s.

Cranberry. Cashew. Coconut.

three ingredients.

  • 1/4 cup dried cranberries
  • 1/3 cup raw cashews
  • 2/3 cup coconut butter

three steps.

  • microwave the coconut butter in a small bowl or mug for 30-60 seconds.
  • spread the melted coconut butter, cranberries, and cashews into a saran or parchment-lined cake pan.
  • freeze for at least 30 minutes, then break into pieces.

(yes, I combined two steps on that last one, but a fourth would clearly ruin the entire theme :P )

Easy, healthy, and delicious.
