I don’t say this very often.
But this is one of the most delicious things I’ve ever eaten.

Remember how I made dense, fudgy brownies by using a boxed chocolate cake mix? Well, let’s just say that I haven’t been able to stop imagining doing the same with a yellow cake mix ever since. I thought, if this method can get me to actually love chocolate, how insanely good would a cake version be??

So, chocolate-lovers, this isn’t entirely for you. This is for my fellow blondie/vanilla/rainbow sprinkle/cake batter lovers. Represent.
cake batter blondies.
ingredients:
- 1 box yellow cake mix
- 1/4 cup canola oil
- 1 egg, beaten
- 1/4 – 1/2 cup milk
- 1/4 cup rainbow sprinkles
- 1/2 cup white chocolate chips (optional)
directions: Preheat oven to 350 degrees. Combine the cake mix and sprinkles in a large bowl, then mix in the oil and egg. Add the milk slowly just until the batter is combined – you want it to remain as dense as possible. Place better in a greased 8×8 pan or 8-inch cake pan. Bake for 25-30 minutes or just until the edges turn golden. Let cool for 20 minutes before cutting because the gooey center needs to set. The result will be a decadent, cake-batter texture.

notes: I should mention that because I don’t have any bakeware yet, I actually baked this batch in a casserole dish (I’m classy like that, what can I say?). If you bake this in a typical brownie pan (8×8) I’m assuming that it would cut the baking time down. So just be sure to keep an eye on this one – you want the edges to *just* be turning golden brown.
**edited to add: I made these again in an 8-inch cake pan, and they came out perfectly! Still bake for 25-30 minutes, or until the edges begin to turn golden brown.
Also – you might think that it’s not fully done because the center will still be quite gooey upon first exiting the oven – but that’s what you want!

After cooling for about 20 minutes, the gooey center is what will lend to the decadent, cake-batter texture. Trust me on this one.

I made these to take to Nashville for a reunion with a bunch of my best friends from college, and they turned out great. On the car ride, my friends ate almost all of them and the few that actually made it there were eaten in 5 minutes, and everyone asked for the recipe! So good!

This IS the best thing I have ever eaten. I have made two batches in the last 4 days. I had a box of yellow cake and a white cake in the pantry already. I made the first batch with the yellow and I accidentally left them in the oven for about 5 minutes too long. They were still good but tasted drier than I had expected. I knew it was my fault. I was working out in preparation for eating them and forgot to turn the timer on. The second batch, I made with the white cake and cooked for the time listed and OMG. My husband and I literally ate the whole pan full in about an hour. These are dangerous!
Found these via Pinterest after the first recipe I had failed miserably. Holy crap. These are fan frickin tastic. I used Funfetti cake mix and no sprinkles or white chocolate because I am a) cheap or b) ghetto (take your pick) and they turned out amazing. No seriously. Like, I have made them twice in two days amazing. I can tell this newfound knowledge is going to cause my waistline some serious damage. Bless you, O Protector of Pants with Elastic Waistbands!
Gracie, may I just say that these blondies are fantastic! I found your website via StumbleUpon, and I haven’t regretted it! I brought the last batch I made to work and they were a HUGE hit- the entire platter was gone in 20 minutes. So, needless to say that this is my new go-to baking item for parties.

Made these once, and ruined them. Completely forgot them while cooking dinner and they were super dry and crumbly, but I added some frosting and made a little sloppy desert for my boys and they didn’t mind;)

Hi Courtney! They’re already pretty sweet and rich on their own…I personally think icing might be a bit too much! Buuut if you want to do icing, maybe try a simple glaze made out of milk and powdered sugar? (I don’t have a specific recipe for that but I’m sure it’d show up on Google!). Let me know if you try it!
thanks for your help im going to try them first and then decide if a glaze is a good idea..also i realized im low on the rainbow sprinkles but i have different kinds like sugar sprinkles, nonpareils,and shaped accents…do you have any suggestions im not sure if the type of sprinkles affect the cake much but im a amateur at these kind of things..thanks again!

Have you tried this using funfetti cake mix instead of yellow cake mix with the added sprinkles? I’m wondering if the funfetti will taste as good.

OMG!!! They look sooo yum! So making these with my best friend.
I don’t know what went wrong, but I could not get these to bake! I did 30 minutes, until the edges were brown and then let them sit for 30 minutes, and the middle was like soup. I baked them for 10 minutes more, let them sit, still like soup. I did this a few more times before giving up. I’m not sure what went wrong! My oven always bakes things in the time suggested, so I can’t even blame that. I was so sad, they look so delicious!!
I love how easy these are to make! I’ve made it three times so far and each time everyone has RAVED about them! They are sooo delicious!

Made these tonight, and they are GREAT! Used the funfetti cake mix but still added a few more sprinkles, no white choc chips (only b/c I forgot them)… Used almost the full 1/2 c. of milk, had the timer set wrong so I’m not *exactly* sure how long I cooked them, but about 24 mins, I think. The edges were just turning golden, so I pulled them out and let them sit for 25 mins. PERFECT. Thanks! These are a keeper.
