I don’t say this very often.
But this is one of the most delicious things I’ve ever eaten.

Remember how I made dense, fudgy brownies by using a boxed chocolate cake mix? Well, let’s just say that I haven’t been able to stop imagining doing the same with a yellow cake mix ever since. I thought, if this method can get me to actually love chocolate, how insanely good would a cake version be??

So, chocolate-lovers, this isn’t entirely for you. This is for my fellow blondie/vanilla/rainbow sprinkle/cake batter lovers. Represent.
cake batter blondies.
ingredients:
- 1 box yellow cake mix
- 1/4 cup canola oil
- 1 egg, beaten
- 1/4 – 1/2 cup milk
- 1/4 cup rainbow sprinkles
- 1/2 cup white chocolate chips (optional)
directions: Preheat oven to 350 degrees. Combine the cake mix and sprinkles in a large bowl, then mix in the oil and egg. Add the milk slowly just until the batter is combined – you want it to remain as dense as possible. Place better in a greased 8×8 pan or 8-inch cake pan. Bake for 25-30 minutes or just until the edges turn golden. Let cool for 20 minutes before cutting because the gooey center needs to set. The result will be a decadent, cake-batter texture.

notes: I should mention that because I don’t have any bakeware yet, I actually baked this batch in a casserole dish (I’m classy like that, what can I say?). If you bake this in a typical brownie pan (8×8) I’m assuming that it would cut the baking time down. So just be sure to keep an eye on this one – you want the edges to *just* be turning golden brown.
**edited to add: I made these again in an 8-inch cake pan, and they came out perfectly! Still bake for 25-30 minutes, or until the edges begin to turn golden brown.
Also – you might think that it’s not fully done because the center will still be quite gooey upon first exiting the oven – but that’s what you want!

After cooling for about 20 minutes, the gooey center is what will lend to the decadent, cake-batter texture. Trust me on this one.

I decided to bake them in a cupcake tray because I don't have the right type of pan. Can't wait to try them
I used Funfetti cake mix instead (because I’m too poor to afford sprinkles). It was delicious, but not very brownie (or blondie) like. To me, brownies and blondies should be really chewy, and these were basically just dense cake. Maybe more oil and less milk? I will be experimentin’ for sure
Wow. Just went back and read some of these comments–have you made this? It takes about 2 minutes to throw the ingredients together. Making cake from scratch would add at least 15 minutes (plus a lot of mess) to the process. And homemade cake doesn’t taste the same as cake mix. Fun fact: even bakeries use cake mix!!!!!!!!!!! Anyways, keep doing what you do and ignore the haters.
im not a big fan of white chocolate, and i know that its optional, but do you know of anything else that i could replace it with? CUZ THESE LOOK DELISH!

I made these earlier this afternoon. After eating one, i put another on a plate and set it a little too close to the edge of our kitchen table and walked away for a minute. By the time I got back to the table, the only thing left was the plate- which my cat was busy licking.

Ok so….this has become my go-to recipe whenever i need to make a dessert. my family loves it, my friends love it, the staff at the JCC love it. I’ve memorized it. That good. Oh, and for valentines day, I used red, white and pink nonpareils (or whatever you call the little ball sprinkles) and made a lovely pink batch. GREAT WORK!

I just made these in an 8 x 8 glass dish, and though they tasted great, they were way too gooey! Not just a little bit but basically raw in the middle. I am afraid if I cooked them longer they would burn. Any thoughts?

Letting them cool for 15-20 minutes is probably a good idea – try that next time? If you already did then maybe just up the cooking time by 5 minutes. You still want them to be sort of gooey on the inside though! After they cool the “goo” will harden up!

I haven’t tried to make them, but for those who think they are not cooking well enough in the middle but seem to be browning the edges, decrease the heat to 325 degrees and cook a bit longer.

Yeah, they can tend to remain quite gooey! Maybe next time increase baking time by 5 minutes or so?

Have had this recipe of yours bookmarked for a while now, and finally made them yesterday. I went a little heavier with the rainbow sprinkles, because you can never have too many sprinkles, but other than that I followed your recipe exactly. They turned out spectacular!
One 8×8 pan, three girls, and a long afternoon of chatting and waiting on the cable guy…that batch didn’t stand a chance.

I am literally eating one right now. SO GOOD. My 2 yr old son almost ate half the batter before I could get them in the oven. I doubled the recipe and put it in a 9×13 after thinking one batch would not survive my 19 yr old little brother. These are SO good. For those that thought they were too gooey, make sure to let them cool 100 percent. Once they were fully cooled they were properly set, and right when I took them out of the oven they still had that raw “jiggle” lol. I was nervous but they turned out amazing!
