sweet potato pie oatmeal.

HI DOLLS! Hope you all enjoyed this last August Sunday :) I spent the afternoon on another date with my momma. We went to Sunset Beach, which is a popular tourist spot in Cape May. It’s home of the “Cape May diamond” and this near-shore shipwreck.

Even though I’m really looking forward to the fall, it’s been nice to soak in these last few weeks of summer!

dinner.

You know, despite my love for it, I don’t eat oatmeal nearly as much as the next blogger. It just doesn’t seem to fill me up as much as breakfast options like eggs or loaded (Greek) yogurt. Even with yogurt or protein powder added, I’m usually hungry within about two hours.

For that reason, along with the fact that I feel rebellious for breaking the ridiculous “no carbs after 5pm” rule, I generally prefer eating oatmeal for dinner. And tonight’s dinner? Holy mother of oatmeal goodness! (…pretend I didn’t say that.)

Sweet Potato Pie Oatmeal.

ingredients:

  • 1/2 cup dry regular oats
  • 1/2 cup almond milk
  • 1/2 cup water
  • 1/2 cooked sweet potato
  • sprinkle of chia seeds
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • sprinkle of stevia

toppings:

  • marshmallows or “fluff”
  • crushed nuts (I used walnuts)

directions: Peel and mash the cooked sweet potato with the back of a fork. Combine the oats, water, milk, mashed sweet potato, and chia seeds in a pot and turn burner on to medium-high heat. Whisk/stir as much as possible until the mixture thickens. Turn burner off, mix in cinnamon, vanilla, and stevia. Transfer to bowl, add toppings, and envision Thanksgiving while digging in :)

Not only was this insanely good (hello melty marshmallow!), but the sweet potato definitely added some extra full-ness factor. Now that’s my kind of oatmeal.
