a really really really tasty treat.

Okay you guys, this is a good one. I can’t say I take all of the credit because a) I wasn’t the first to discover the delicious combination of nut butter + dates and b) I also didn’t come up with the insanely amazing idea of freezing nut butter.

BUT. I do demand that you go make this treat…STAT!

frozen peanut butter dates.

Step 1: spread a layer of nut butter on plastic wrap (I used PB&Co. White Chocolate Wonderful).

Step 2: make sure not to leave any nut butter behind.

Step 3: place a date in the center of the nut butter.

Step 4: fold the plastic wrap so that the date is completely surrounded by nut butter (it will be purse-like, with the excess plastic wrap twisted at the base).

Step 5: freeze for at least 15 minutes (or more, depending on your freezer).

bacon & feta brussels sprouts.

Another notable treat from today was this bowl of brussels sprouts topped with crumbled bacon and feta cheese.

Let’s be honest here. This isn’t the best way to eat brussels sprouts. It’s the only way to eat brussels sprouts.

To make this dish:

  1. Thaw a small package of frozen brussels sprouts (they don’t have to be entirely thawed. 10-15 minutes should do the trick).
  2. Season with salt, pepper, and garlic powder.
  3. Sautee on medium heat with at least 1/2 tablespoon of butter for 8-10 minutes, or until the outside of the brussels start turning brown.
  4. Transfer to a bowl, top with crumbled bacon and feta cheese.

Easy enough, right? :) Funny thing is, I used to hate brussels sprouts. Or, I at least thought I did. Turns out they just had a bad rep! Now they’re easily one of my favorite vegetables.

Oh, and highly suggest that you don’t skimp on the butter. Trust me on this one.

side note…

If you noticed my picture quality isn’t so hot, it’s because I’ve been using the camera on my phone. Apparently my Canon PowerShot decided to peace out on me today :? Well, not entirely, but the screen/photos have become grainy and discolored. Has anyone else with a PowerShot experienced this?

    Mmmm, I do love all sorts of dried fruits though…cranberries are my favorite! I’m dying to try dried mango, I keep seeing it around blogs and I know I’d love it!

  • I can’t do brussel sprouts….however, I have to admit that I haven’t tried them with bacon and that usually solves any food problem! hehe

  • This post could not have come at a more perfect time. I have never made brussel sprouts before but am planning on buying some next time I go to Trader Joe’s, and now I have a way to make them. :)

    Hmmm…favorite dried fruits…right now I am loving the red chile dried mango from Trader Joe’s. It’s a bit spicy, so I can only eat one at a time. Otherwise, I am a huge raisin fan.

    Once again, your creativity astounds me. The date thing? Genius. Dates are one of my favorite dried fruits, though I also love TJ’s chili-spiced mango. I die.

    My favorite dried fruit is dried mango or dried pineapple. I want some now. And brussels are my favorite veggie.

  • My favorite dried fruit is dried cranberries. They’re not exotic but I love them! I’ve honestly never tried brussels sprouts but I think I would like them if I did.

    I def just made one of those frozen peanut butter date snacks, but I stuffed the date with an almond first. Crunchy, sweet treat :) Almost like a truffle, but so much better!!

  • I can’t wait to make some frozen nut butter dates! I’m a huge fan of dried fruit -cranberries, cherries, apricots, FIGS and even good ole raisins. I also like Brussels sprouts. Always have.

  • This recipe is perfect for two reasons: 1) I have a TON of dates leftover from a recipe I made a month ago, and 2) peanut butter + anything = bliss. Can’t wait to try them!

    I LOVE Brussels sprouts, and can only imagine that they’re delish coupled with bacon and feta. Wowza yum.

    Sorry about your camera! I owned the exact same one until a few weeks ago, when I spilled water in my bag and ruined it! Maybe try taking it to a camera shop or Best Buy?

    I love dried apricots. I have the same camera you do! I haven’t had any problems like that with mine yet (cross my fingers)!! Did you get a warranty with it? I had an extended warranty with my old camera, one of my friends dropped it and the store couldn’t fix it, so I ended up with a gift card for the original price to use on whatever new camera I wanted!

    ps: totally going to make that date thing asap. until i get more dates, i might have to sub chocolate chips!

  • I still have yet to make brussles sprouts. Sad. I think I’d roast them first before topping with the feta and bacon since roasting makes all veggies better–and I’m still apprehensive. I wish no one called brussles sprouts gross when we were kids. I’m sure I would have tried them by now.

    My camera just did the peace out act on me too! Also a Canon, also a PowerShot. I just mailed it off for repair, which I think is probably cheaper than buying a new one. Your phone photos made me want to eat your nut butter/date thingy, so it can’t be all bad, right? ;)

    My Canon did this also… I didn’t use it for like 6 months and then one day my husband got it out (he was tired of me always stealing his camera:)) and found an option in the menu to reset to the default settings and sure enough that fixed it! I’m not sure HOW that fixed it but it works fine so maybe it’s worth a shot! Good Luck :)

  • Wow that date/pb snack is genius. I am definitely making that! I love brussels sprouts too but never had them with bacon and feta! Mine usually turn out so boring! Everything tastes better with bacon :)

  • Ooh I love the idea of freezing nut butter around something! This would taste amazing with AB + banana! And maybe a sprinkling of chocolate and coconut too. :D

    I love all dried fruit. I have a huge bag in my cupboard and I usually find myself reaching into it at least a few times a day!

    I do love dates – a really good Medjool is straight up CANDY – but I’m also a dried cranberry and pineapple fan.

    I love me some brussels sprouts! Roasted = perfection.
