If you pay attention to the health community, you’ve probably noticed that brown rice is out, and quinoa is in. So, what’s with all the buzz around this supposed “superfood?” Is quinoa a trend that *you* should be following?

what is quinoa?
Although it is most commonly considered a grain, quinoa is actually a relative of leafy green vegetables like spinach and Swiss chard.
Cooked quinoa seeds are fluffy and creamy, yet slightly crunchy. They have a delicate, somewhat nutty flavor. While the most popular type of quinoa is a transparent yellow color, other varieties feature colors such as orange, pink, red, purple or black.

health benefits:
Not only is quinoa high in protein, but the protein it supplies is complete protein, meaning that it includes all nine essential amino acids. This makes quinoa a good choice for vegetarians and vegans who are concerned about getting adequate protein intake.
Quinoa is especially well-endowed with the amino acid lysine, which is essential for tissue growth and repair. In addition to protein, quinoa features a host of other health-building nutrients. Because quinoa is a very good source of manganese as well as a good source of magnesium, iron, copper and phosphorus, this “grain” may be especially valuable for persons with migraine headaches, diabetes and atherosclerosis. Quinoa is also naturally gluten free, which makes it a great grain option for those with celiac disease or gluten free diets.

how to prepare quinoa.
Before cooking quinoa, it’s a good idea to thoroughly wash the seeds to remove any remaining saponin residue (a coating that could be mildly toxic and taste bitter). To do this, place quinoa in a fine-meshed strainer and run cold water over it, while gently rubbing the seeds together with your hands.
Quinoa cooks similarly as rice – combine one part quinoa to two parts liquid in a saucepan (use chicken or vegetable stock for added flavor). Bring the mixture to a boil, and then reduce the heat to simmer and cover. Let it simmer for 10-15 minutes. When the quinoa is cooked it will look soft and translucent. If you desire the quinoa to have a nuttier flavor, you can dry roast it before cooking; to dry roast, place it in a skillet over medium-low heat and stir constantly for five minutes.

Quinoa can be found at most natural health food stores, including Trader Joe’s and Whole Foods. As it becomes more popular, though, you may start finding it in your local grocery store as well.

why I love quinoa.
In additional to its health benefits, quinoa is incredibly tasty and versatile. It’s nutty flavor is unlike any other grain, and you can add pretty much anything to it that you’d like – making an either sweet or savory dish.
I love that you can add pretty much any mix-ins – vegetables, cheese, beans, meat, nuts – and make a delicious and healthy meal out of it. I find that quinoa is also more filling than most other grains.

That looks so good. I have never tried quinoa but I want to now!!!
I love quinoa though I haven’t always, no matter how much I rinsed it, I couldn’t get rid of the bitter taste. Now, I soak it for a few minutes in warm water before rinsing and now, I eat it a few times per week. My favorite way is to use it as a base for stir fry but I really want to try having it for breakfast.

Love quinoa…I just made a Black Bean Red Quinoa a couple days ago! Phenom! I also have made a Cranberry Lime quinoa that gets rave reviews!
I do like quinoa but I definitely think it takes a little getting used to! The texture is a bit funky. I usually just pair it with sauted veggies, little marinara, and some red pepper flakes. Mhmm mhhmm good!
LOVE quinoa, but the jury is still out with Mr. KD so we use it sparingly.

You know what’s sad? I know I’ve had it, but it’s been so long I can’t remember exactly what it tastes like. I need to remedy that I think. It certainly does seem like a great food to include.
And I just have to vent a second. The Calorie King or whatever site it is that uses the stars to rate foods drives me batty. It’s like they only rate calories. How can something as good as quinoa have 2 stars but I wouldn’t be surprised if a 100 cal pack had 3 or 4? Grrr. Okay, I’m off my soapbox now. Haha!
I love quinoa (def. not a trend in my book!) It’s not only tasty, but it cooks quickly and you can roast it & make it crunchy! Sort of like a crispy granola/cereal
Mmmm, quinoa! Thanks for some new recipes! I currently have 4 cups of quinoa in my freezer because the hubs didn’t realize that “1 cup cooked quinoa” in a recipe does not mean “put one cup of UNCOOKED quinoa in the pot!”
I love me some quinoa! I make a mean breakfast quinoa – natural maple syrup, dried cranberries and sliced almonds. It is so darn good!

Quinoa is one of those things that I desperately WANT to like but just don’t. But I think I’ve just never had it prepared properly. The texture has always been a bit too…chewy? I don’t know…

I love quinoa! My favorite way to eat it is quinoa-stuffed peppers. I cook the quinoa in my rice cooker, which makes it so quick and easy. I also have never had trouble any finding it in my local grocery store.

I love quinoa, and I think part of the reason is that it’s semi crunchy, semi chewy. Plus, it cooks super fast, which is much appreciated during the workweek.

I love quinoa too! I stumbled upon it years ago at a restaurant and only recently starting making it myself. I can’t seem to get it as “fluffy” as I would like though. I think I need to add more water. Thanks for the recipes!

I love quinoa! For Thanksgiving my mom also always makes a “healthy” stuffing and it’s made with quinoa and all kinds of greens and walnuts. So. Good. Ever since I’ve gotten the recipe I make it all of the time!

I made quinoa for dinner tonight. It is by far my favorite type of grain. It packs a big punch and is particularly good for anyone with dietary issues. I think that quinoa has a great rustic flavor and will often eat it just with a drizzle of olive oil.

I am in love with quinoa- traditional or red… its awesome. Its such a great vegan way to add protein and still enjoy a hearty staple and its so versatile!!
