chicken salad with grapes & walnuts.

For dinner tonight I had chicken salad with grapes and walnuts atop a bowl of romaine.

To make the chicken salad, I combined:

  • 1 1/2 boneless breasts of cooked chicken, cut into bite-sized pieces
  • 1/4 cup seedless grapes, cut in half
  • 1-2 tbsp (15 grams) walnuts, crushed
  • 1 tbsp canola oil mayonnaise
  • 1-2 tbsp plain Greek yogurt
  • a splash of lemon juice
  • 1/4 tsp kosher salt
  • 1/4 tsp sugar (optional)
  • freshly ground pepper (to taste)

Okay, okay, I wasn’t entirely bored with this. In fact, if you’re bored with plain old grilled chicken, you should definitely give this recipe a try. The creamy dressing, crunchy walnuts, and juicy grapes make for a pretty phenom chicken salad.
